INGREDIENTS

  • 2 tablespoons Pure Wesson® Canola Oil
  • 6 boneless pork chops (6 chops = 1-3/4 lbs)
  • 1/4 teaspoon salt
  • 1 can (14 oz each) whole berry cranberry sauce
  • 1/2 cup apple jelly
  • 1 tablespoon Gulden’s® Spicy Brown Mustard
  • 1/2 teaspoon dried thyme leaves
  • 1 tablespoon cornstarch

 

DIRECTIONS

Heat oil in large skillet over medium-high heat. Sprinkle meat with salt. Place in skillet; cook 4 minutes or until lightly browned. Turn meat, reduce heat to medium and cook 6 minutes more or until slightly pink in centers (160°F).

Stir together remaining ingredients in small bowl until well blended. Gradually add to meat in skillet; cook 3 to 4 minutes or until sauce is thickened, stirring constantly.

 

COOK’S TIPS

Serve with basmati rice and a baby spinach salad.

  • 12 frozen Banquet® Original Chicken Breast Tenders (from 24-oz bag)
  • 1 can (14.5 oz each) Hunt’s® Petite Diced Tomatoes, drained
  • 1/4 cup Hunt’s® Original Barbecue Sauce
  • 1/4 cup ranch dressing
  • 8 cups chopped romaine lettuce
  • 1/2 cup frozen whole kernel corn, thawed
  • 8 large white tortilla chips, coarsely broken

 

 

DIRECTIONS

Prepare chicken tenders in microwave according to package directions; keep warm and set aside.

Stir together drained tomatoes, barbecue sauce and dressing in small bowl; set aside. Divide lettuce between 4 serving plates. Spoon tomato mixture evenly over lettuce; sprinkle evenly with corn.

Top each salad with 3 reserved chicken tenders, cut in half. Sprinkle with broken tortilla chips. Serve immediately.

  • 1 large red-skinned apple

 

 

DIRECTIONS

Spread each tortilla to 1/2 inch of edge with 2 tablespoons peanut butter. Sprinkle 1-1/2 tablespoons granola over lower two-thirds of peanut butter.

Cut apple into quarters; remove core and chop into small pieces. Sprinkle apple evenly over granola.

Start rolling each tortilla on apple end. Fold over 1 edge and continue rolling up, leaving one end open. OR, fold over both edges and continue rolling up burrito style.

DIRECTIONS

 

Preheat broiler. Spray cut surface of rolls with cooking spray. Lightly toast under broiler.

Meanwhile, stir together mayonnaise and mustard in small bowl; spread on toasted sides of rolls. Top each roll half with 1 ounce ham, 3 slices tomato and 1-1/4 slices cheese (enough to cover tomatoes).

Place sandwiches under broiler, 3 to 4 inches from heat. Broil until cheese melts and starts to bubble.
